Chickpeas form the basis of this burger and provide plenty of protein. Also plenty of flavor when you add pecans, spinach, shallots and chopped peppers.

  • Servings: 6


2 cans Chickpeas, drained and mashed
1½ cups Finely Chopped Pecans
1½ cups Whole Wheat Bread Crumbs
1¼ cups Finely Chopped Fresh Spinach
¾ cups Grated Carrot
¼ cup Chopped Green Pepper
¼ cup Chopped Red Pepper
6 Shallots, chopped
2 Tbsp Chopped Celery
1 Tbsp Chopped Fresh Parsley
¼ tsp Pepper
¼ cup Lowfat Mayonnaisse


Combine chickpeas and all ingredients. Shape into 6 patties. Saute patties in olive oil until browned on both side, then serve with your favorite condiments.
