
Fresh vegetables are sauteed in olive oil with tofu, and then topped with cheese for a simple vegetarian breakfast or dinner.
Steam 1 cup vegetables until al dente.
Chop tofu into 1/2 inch cubes. Heat oil on medium high, and then add vegetables and tofu to oil. When tofu is hot and no liquid is left in pan, turn stove off and remove from heat.
Top with cheese and pepper if desired.
Notes:
When completed, this dish should resemble scrambled eggs.
